Ingredients

Ingredients

8 Thick-cut applewood-smoked bacon
2 Filet mignon
1 pinch Kosher salt and freshly ground black pepper
1 tbsp Canola oil for brushing

Bacon-Wrapped Filet Mignon Directions

  1. Bring a saucepan half full of water to a boil over high heat. Add bacon, reduce heat to medium, and cook for 5 minutes.
  2. Remove steaks from refrigerator at least 30 minutes before grilling.
  3. When bacon is cool enough to handle, wrap two slices around edge of each steak; secure with kitchen string.
  4. Season steaks on both sides with salt and pepper, then brush with oil.
  5. Prepare charcoal or gas grill for direct grilling over high heat. Brush and oil grill grate.
  6. Place steaks on grill and cook 4 minutes. Using tongs, rotate each steak a quarter turn, and cook another 2 minutes.
  7. Turn steaks over and continue to cook until done to your liking, about 6 minutes longer for medium-rare.
  8. Plate steaks and let rest 5–10 minutes. Remove string. Serve with warm béarnaise sauce.
