Salt-Baked Steaks Directions
- Preheat hardwood charcoal for direct grilling over medium-high heat. Brush and oil your grill rack.
- Place steaks on grill rack. Sprinkle tops with a 6-mm layer of salt.
- Grill steak until bottom is darkly browned and beads of blood start to form on the top, about 5 minutes.
- Turn steak (allowing salt to fall off), and sprinkle top with another layer of salt.
- Continue to grill until bottom is browned and cooked according to taste, about 4–5 minutes for medium-rare.
- Using tongs, turn steak on its side and whack with the back of a knife to knock off excess salt.
- Transfer steak to a cutting board and let rest 2 minutes.
- Cut meat from bone in a single piece, then cut crosswise on the diagonal into thin slices.
- Return bone to the fire to char it, and serve it separately.
