Mom's Thanksgiving Dressing Directions
- Simmer the neck and gizzard in a 2-quart saucepan covered with water by 1 inch over medium heat for 1 hour. Remove the meat.
- Melt the butter in a large sauté pan over medium heat. Add the onions, green peppers, and celery and cook for 2–3 minutes. Add the salt, pepper, and poultry seasoning and cook for about 10 minutes longer.
- Crumble the cornbread into large chunks in a large bowl. Add the vegetables, the chopped eggs, and about half of the turkey liquid. Toss to combine well.
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Pack the dressing into a 9 × 9-inch pan. Pour another tablespoon or two of the cooking liquid over the top. Bake for 30–40 minutes or until warmed through, adding the reserved cooking stock to keep the dressing moist. Serve hot or at room temperature.
