Ingredients

Ingredients

1 small store-bought graham cracker crust
0.75 cup lemon curd
2 large egg whites
0.13 tsp cream of tartar
0.5 pinch salt
0.25 cup superfine sugar
0.5 tsp vanilla extract

10-Minute Lemon Meringue Icebox Pie Directions

  1. Prebake the crust according to the package directions and set aside on a wire rack to let cool thoroughly.
  2. Place the lemon curd in a small bowl and stir until smooth. Spread evenly in the cooled pie shell. Set aside.
  3. When you're ready to make the meringue, preheat the broiler. Using a large bowl, beat the egg whites with an electric mixer on medium-high speed until they hold soft peaks. Beat in the cream of tartar and salt. Gradually add the sugar, beating on high speed until the meringue is thick, glossy, and voluminous. Beat in the vanilla. Stick a rubber spatula into the meringue to help judge the consistency. It should be soft but firm, though not dry.
  4. Smooth the meringue evenly over the pie. Place the pie on a baking sheet and run it under the broiler just until golden brown. Slice and serve immediately.
