Italian Steak Salad with Arugula Parmesan & Lemon Directions

  1. Prep & Preheat: Prepare charcoal or gas grill for direct grilling over medium-high heat. Brush and oil grill rack.
  2. Marinate: Rub thyme, salt, and ¼ teaspoon pepper over steaks.
  3. Grill: Place steaks on grill rack and sear, turning once, until nicely charred on the outside and medium-rare in the center, about 8 minutes.
  4. Char Lemon: About halfway through cooking time, place lemons on grill rack, cut sides down, and sear until nicely charred, about 3 minutes.
  5. Cut: Transfer steaks to cutting board and let rest 5 minutes. Thinly slice across the grain.
  6. Mix Dressing: In a small bowl, whisk together remaining pepper, chives, olive oil, lemon juice, mustard, and salt.
