Ingredients
Ingredients
0.5 Laib Day-old brioche or challah bread
3 Large eggs
60 g Superfine sugar
240 ml Milk
240 ml Heavy cream
2.5 g Ground cinnamon
1 pinch Freshly grated nutmeg
40 g Butter, melted and cooled to room temperature
Brioche French Toast Directions
- Cut the bread into 1-inch slices.
- Whisk the eggs, sugar, milk, and heavy cream together in a large bowl. Add the cinnamon and nutmeg and whisk to combine.
- Lay the bread slices in a shallow baking dish and pour the egg mixture over them; let the bread sit until it begins to absorb the liquid, 2 to 3 minutes, then flip and let sit for 2 or 3 minutes more. The custard mixture should be almost completely absorbed.
- Preheat the oven to 400 degrees Fahrenheit (approx. 200°C (392°F)). Place a baking sheet or ovenproof serving platter in the oven.
- Place a large skillet over medium-high heat and coat the bottom of it with butter. Add 3 or 4 slices of soaked bread and cook until they are golden brown and crisp on the bottom; flip and cook on the second side, adding more butter to the pan as necessary.
- Transfer the finished slices to the baking sheet in the oven to keep warm while you continue the process with the remaining bread and butter.
- Serve the French toast immediately, with powdered sugar, maple syrup, fresh berries, or any other of your favorite toppings.
