Texas-Style BBQ Brisket Directions
- Remove the brisket from the refrigerator at least 1 hour before cooking.
- Season generously all over with salt and pepper, packing the coating on well. Sprinkle with garlic if using, then gently rub over seasoning.
- Prepare a smoker or grill for smoking over low heat (107–120°C (248°F)). Add soaked wood chips to the fire.
- Place the brisket fatty side up on the grill as far away from the fire as possible. Cover and cook 4–6 hours until an instant-read thermometer registers 66–77°F in the thickest part of the meat.
- Remove brisket from grill, wrap in aluminum foil, and return to smoker or oven for an additional 4–6 hours (or place in 250°F/120°C (248°F) oven).
- Brisket is ready when fork tender and thermometer registers 91–96°F.
- Transfer brisket to a cutting board, remove foil, and let rest at least 30 minutes.
- Thinly slice across the grain and serve with BBQ sauce.
