Linda's Blue Cheese and Rosemary Biscuits Directions
- Preheat your oven to 450 degrees (230°C (446°F)).
- Line a baking sheet with parchment paper.
- Pour the flour into a large bowl. Work 4 tablespoons of the butter and the bacon fat into the flour with a pastry cutter or your fingers until the mixture forms pea-sized crumbs. Stir in the blue cheese. Pour in the milk, stirring until the dough is just moist.
- Turn the dough onto a floured cutting board or countertop. Flour your hands and knead the dough 3 times. Roll or pat to 1/2 inch thick.
- With a 2-inch biscuit cutter, cut as many biscuits as you can, reworking the dough when necessary. Place the biscuits about 1/2 inch apart on the baking sheet.
- Bake for 10–12 minutes or until the tops are golden brown.
- While the biscuits are baking, heat 2 tablespoons of the butter, the garlic, and the rosemary in a small saucepan over medium heat until the ingredients melt together. When the biscuits are done, remove the rosemary and then brush the butter mixture over the tops of the biscuits.
- Serve immediately.
