Ingredients
Ingredients
1 Cinnamon sticks
1 tsp Cinnamon powder
1 tbsp Whole juniper berries
1 tbsp Whole allspice berries
1 tsp Whole cloves
1 l Water
1 tbsp Pickling salt
200 g Sugar
240 ml Vinegar
2 Dosen Crushed pineapple, undrained
1 Pineapple rinds
Holiday Chutney Directions
- Combine the water and pickling salt in a very large bowl. Cut the rinds into 1-inch pieces. Add them to the brine and pour the ice over the top. Allow to brine for at least 6 hours, but overnight in the refrigerator is better.
- Bring the sugar, vinegar, water, and spices to a boil in a large pot over high heat. Reduce heat and simmer for 10 minutes. Drain and rinse the rinds and add them to the pot. Cook for 1 hour or until translucent.
- Pack into hot sterilized jars and either continue the canning process (see Ball's website) or store in the refrigerator for up to 4 months. Either way, serve cold.
