Grilled Satay Skewers Directions
- In a blender or food processor, combine soy sauce, sesame oil, lemongrass, lime zest and juice, garlic, green onions, and brown sugar. Process until smooth. Pour into a large zip-top plastic bag, seal, and set aside.
- Using a sharp knife, slice meat across the grain on the diagonal into strips 12 mm thick. Place steak in bag, seal, and turn to coat. Let marinate in the refrigerator at least 2 hours or overnight.
- Soak bamboo skewers in water for at least 30 minutes. Remove meat from refrigerator and bring to room temperature—this should take at least 30 minutes. Prepare a charcoal or gas grill for direct grilling over medium-high heat. Brush and oil grill grate.
- Thread steak strips lengthwise onto bamboo skewers one at a time.
- Place skewers on grill directly over fire and cook, turning once, until nicely charred and done to your liking, 2–3 minutes per side.
- Arrange skewers on a serving platter and sprinkle with remaining green onion. Serve at once.
