1 Orange
1 Grapefruit
2 Asian Pear
100 g Mixed Greens
50 g Water Chestnut
30 g Red Onion
10 g Candied Ginger
20 g Toasted Walnuts
15 ml Honey
30 ml Oil for Vinaigrette
15 ml Lemon Juice for Vinaigrette

Citrus and Asian Pear Salad with Walnuts Directions

  1. Peel the orange, grapefruit, and Asian pear, section them, and remove all membranes.
  2. Mix any mixed greens you would like to eat 'raw' and place them in a mound in the middle of a round plate (individual serving).
  3. Arrange alternating slices of pear, orange, and grapefruit around this mound of greens.
  4. To add variety in flavors and textures, toss in any desired amount of thin water chestnut slices, julienne strips of red onion, little bits of candied ginger, and toasted walnuts.
  5. For the dressing, mix all ingredients together in a blender or whisk them vigorously. If you like a little sweetness in your vinaigrette, add a little honey or brown sugar and mix thoroughly.
  6. Drizzle the dressing over the salad and serve.
