Ingredients
1 Beef ribs (2 racks, 8 bones each)
3 tsp Granulated garlic or garlic powder
2 pinch Salt and freshly ground pepper
200 g Wood chips (soaked in water)
250 ml Barbecue sauce
Slow-Smoked Beef Ribs Directions
- Remove the thin membrane from the back of each rib rack and trim off excess fat. Season all over with garlic, salt, and pepper.
- Prepare a smoker or a charcoal or gas grill for smoking over low heat; the temperature inside the grill should be 95–120°C (248°F) (200–250°F). If using charcoal, bank lit coals on either side of the grill bed, leaving a strip in the center without heat. Place a drip pan in the center strip and fill with water. Add about 90 g wood chips to the fire just before grilling. If using gas, fill the smoker box with about 90 g chips, then preheat grill. Turn off one or more burners to create an indirect-heat zone. Brush and oil grill grate.
- Place ribs, bone side down, on grill rack over indirect heat area. Cover and cook until tender, about 2 hours, adding additional wood chips every 30 minutes or so; add more coals as needed if using charcoal.
- Transfer racks to a cutting board and let rest for 10 minutes. Cut racks into individual ribs and pile on a platter. Serve at once with barbecue sauce.
