Ingredients

Ingredients

283.5 g Beef bones
2880 ml cold water
1 brown onions
120 g dried thick rice noodles
140 g beef fillet steak, thinly sliced
80 g bean sprouts
3 green onions
2 red birdseye chilies
5 cm ginger
2.5 star anise
1 cinnamon sticks
1.25 tsp black peppercorns
2.5 cloves
15 ml lime juice
24 g mint leaves
24 g coriander leaves
1.25 tbsp coriander seeds
30 ml fish sauce
6 lime wedges

Pho Bo Beef Noodle Soup Directions

  1. Prepare the broth: Put beef bones, water, onion, ginger and all the dry spices (star anise, cinnamon, peppercorns, cloves, coriander seeds) in a big pot. Turn the heat to high until it boils. Lower the heat and let it cook without the lid for 3 hours. Stir now and then to remove fat from the top with a spoon. The liquid should reduce to half. Let it cool down a bit.
  2. Strain the soup: Pour everything through a strainer into a clean pot. Pick out any meat from the bones to use later. Throw away everything else from the strainer.
  3. Season the broth: Heat up the strained soup again. Add fish sauce and lime juice. Taste it and add more salt, pepper, fish sauce or lime juice if needed.
  4. Prepare noodles and toppings: Put noodles in a big bowl and pour hot water over them. Wait 5-10 minutes until they're soft, then drain. Share the noodles and saved meat between 2 bowls. Put raw beef slices on top. Pour the hot soup in each bowl.
  5. Finish and serve: Top with bean sprouts, green onions, chilies, mint and coriander. Serve right away with lime wedges.
