Ingredients

Ingredients

11.34 g Yeast (active dry)
37.5 g Sugar
600 ml Warm Water
780 g Unbleached Bread Flour
15 g Kosher Salt
42.5 g Butter or Lard
15 ml Canola or Neutral Oil

A Child's First Bread Directions

  1. Mix together the yeast, sugar, and water in a large bowl. Add 2 cups of the flour, then stir in the salt and butter. Set the bowl in a warm spot for about 10 minutes, until the mixture is foaming.
  2. Add the remaining 4½ cups flour, ½ cup at a time, mixing well after each addition. When the dough begins to form a mass and pull away from the sides of the bowl, turn it out onto a lightly floured surface. Knead the dough until it is smooth and elastic, 8 to 10 minutes.
  3. Lightly coat a large bowl with oil. Place the dough in the bowl and turn to coat it lightly all over. Cover the bowl with a clean damp cloth and set it in a warm, draft-free place until the dough is doubled in volume, about 1 hour.
  4. Lightly oil two loaf pans. Deflate the dough by punching it down with your fist, then turn it out onto a lightly floured surface. Knead the dough lightly again, just a few turns, and divide it into two equal pieces; form each piece into a loaf.
  5. Fit the loaves into the pans, seam side down, and cover them with the damp cloth. Let the loaves rise until doubled, about 40 minutes.
  6. Preheat the oven to 425 degrees (220°C (428°F)). When the loaves are ready, place them in the oven, lower the heat to 375 degrees (190°C (374°F)), and bake for about 30 minutes, or until the tops are golden brown.
  7. Turn the loaves out onto baking racks and resist the temptation to slice into them before they are cool—about 1 hour.
